Proteolytic enzymes are enzymes that begin the breakdown of protein through hydrolysis. Hydrolysis is a chemical reaction wherein one or more molecules cleave peptide bonds that link amino acids together in the polypeptide chain.

Take for example Alpha-Amylase. It is a starch digesting non essential enzyme present in the saliva and in he pancreatic juice. It is capable of breaking down complex starch into simple sugars components.

One particular proteolyitic enzyme or protease that is popularly used to treat pain, inflammation, osteoarthritis, and rheumatoid arthritis is serrapeptase. It is an enzyme derived from the intestine of silkworms. Generally, silkworms use this enzyme to dissolve their cocoon.
